Church Road McDonald Series Sauvignon Blanc is hand harvested and gently whole bunch pressed to craft a finely textured, complex and age-worthy style of Sauvignon Blanc. This more complex style of Sauvignon Blanc can be successfully matched with a wide range of foods. Great with a range of seafoods including richer dishes such as scallops or crayfish. Try with fresh and vibrant salads and vegetables including fennel, tomato, basil, parsley, rocket, capers, green beans and asparagus and good quality Mozzarella cheese. It also works well with richer poultry dishes and butter-based sauces such as beurre blanc.
On the nose, the wine exhibits quince, nectarine and lime with lifted citrus blossom and elderflower notes. This is complimented by subtle creaminess and a mineral like complexity derived from the wild fermentation in French oak.
Tasting Notes : Vibrant flavours of quince, nectarine, pink grapefruit and elderflower are complimented by a flinty minerality, notes of roasted cashew nut and a subtle creaminess derived from wild fermentation and lees aging in French oak. On the palate the wine is medium bodied, finely textured and persistent with a slightly flinty edge.
